Cuore di Vetro is named after Werner Herzog's film "Heart of Glass". Metaphorically it stands for our glass workshop. Here we create our fresh ice cream every day - with first-class ingredients, sophisticated recipes and passion and amore. We offer a selection of up to 16 types of ice cream that vary throughout the day. Always fresh and made with the best ingredients: with organic milk for the cream ice cream and fresh fruit, depending on the season, for our sorbets. We work with the philosophy of the espresso principle: This means continuous production of gelato and patisserie throughout the day. Nothing comes from the warehouse - that's why you will find a varied range in our range from morning to night. The best ice cream masters in Italy like Giacomo Schiavon, Antonio Mezzalira and Alberto Vitaro introduced us to the high art of artisanal ice cream. We work with the latest technology, continuously refine our recipes and develop new varieties for exciting moments of pleasure. Through our glass manufactory, our guests can observe the rituals of the handicraft and our constant production down to the last detail. You can also see that we use the best ingredients that we source directly from small producers, such as the pistachios from Bronte, the hazelnut IGP from Piedmont, the Bourbon vanilla from Madagascar and various types of valuable chocolate and cocoa from mono-origin. Our ice creams contain up to 70 percent regional organic milk and the most valuable milk by-products such as mascarpone, ricotta, butter and yogurt. We prepare the sorbets with a very high proportion of fresh, seasonal fruits - the lemon variety is 21%, with the other fruits at least 50 to 70%. All sorbets, including cocoa, almond and pistachio sorbets, are vegan and cholesterol-free, and we create ice cream as a dessert that can be enjoyed all year round - anytime and at home. The reason why some types are creamier, firmer, more liquid or crisp is because we design each type from scratch: while many ice cream manufacturers work with bases as a consistency structure, each of our varieties is created for itself - so each has a variety not only their own taste but also their own texture and thus character!
